Coco López was invented by Don Ramon Lopez Irizarry. Coconuts had long been used as an important ingredient in desserts on the tropical islands. The only downside to their use was the sheer amount of time it takes to make coconut cream from fresh pulp, so Irizarry set out to create a solution to this. In his small laboratory, he discovered the perfect mix of natural sugarcane and cream of fresh, sun-ripened, Caribbean coconuts to create the ultimate convenience cream. Very soon, Coco López had caught on and could be found in supermarkets around the islands, leaving many tourists who visited wanting to take home the "Official Beverage of Puerto Rico". Now Coco López is a staple in many a mixologist's arsenal.
